Ingredients:

  • 1 cup (150g) cooked turkey breast, shredded
  • 1/2 cup (75g) diced apples (such as Granny Smith)
  • 1/4 cup (35g) chopped walnuts
  • 1/4 cup (60g) mayonnaise (or Greek yogurt for a lighter version)
  • 1 tablespoon (15ml) lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices (about 240g) bread (such as whole grain or sourdough)
  • 1/2 cup (60g) shredded cheddar cheese

Instructions:

  1. In a mixing bowl, combine shredded turkey, diced apples, walnuts, mayonnaise, lemon juice, salt, and pepper. Mix until well blended and set aside.
  2. Lay out two slices of bread on a clean surface. Divide the turkey Waldorf filling evenly onto each slice. Top with shredded cheddar cheese and cover with remaining bread slices.
  3. Preheat the griddle or grill pan over medium heat. Lightly butter the outside of each sandwich. Place the sandwiches on the grill and cook until golden brown, about 3-4 minutes per side, pressing down gently with a spatula. The cheese should melt completely and filling heated through.
  4. Remove from the grill, slice in half, and serve warm.
