Ingredients:
- 1 cup (150g) cooked turkey breast, shredded
- 1/2 cup (75g) diced apples (such as Granny Smith)
- 1/4 cup (35g) chopped walnuts
- 1/4 cup (60g) mayonnaise (or Greek yogurt for a lighter version)
- 1 tablespoon (15ml) lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 slices (about 240g) bread (such as whole grain or sourdough)
- 1/2 cup (60g) shredded cheddar cheese
Instructions:
- In a mixing bowl, combine shredded turkey, diced apples, walnuts, mayonnaise, lemon juice, salt, and pepper. Mix until well blended and set aside.
- Lay out two slices of bread on a clean surface. Divide the turkey Waldorf filling evenly onto each slice. Top with shredded cheddar cheese and cover with remaining bread slices.
- Preheat the griddle or grill pan over medium heat. Lightly butter the outside of each sandwich. Place the sandwiches on the grill and cook until golden brown, about 3-4 minutes per side, pressing down gently with a spatula. The cheese should melt completely and filling heated through.
- Remove from the grill, slice in half, and serve warm.
