- 1 ½ cups all-purpose flour

Instructions:
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
- On a floured surface, roll out the dough to about ¼ inch thick.
- Cut out cookies using a round or scalloped cookie cutter and place them on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
- Remove from the oven and let cool on a wire rack before enjoying.
