Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking powder

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully combined.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for 30 minutes to firm up.
  7. On a floured surface, roll out the dough to about ¼ inch thick.
  8. Cut out cookies using a round or scalloped cookie cutter and place them on a baking sheet lined with parchment paper.
  9. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  10. Remove from the oven and let cool on a wire rack before enjoying.
