Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • 4-5 tablespoons ice water
  • 4 cups ripe tomatoes, sliced
  • 1 cup shredded mozzarella cheese
  • ½ cup crumbled feta cheese
  • ½ cup mayonnaise
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • ¼ cup fresh basil, chopped

Instructions:

  1. Combine flour and salt in a bowl. Cut in butter until it resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together. Form into a disk, wrap in plastic, and chill for 30 minutes.
  2. Preheat oven to 375°F (190°C).
  3. Slice the tomatoes and sprinkle with salt to draw out moisture; let sit for 10 minutes. In a mixing bowl, whisk together mayonnaise, eggs, garlic powder, basil, and season with salt and pepper.
  4. Roll out the chilled dough and fit it into the pie dish. Layer mozzarella on the bottom, followed by half of the tomato slices. Pour half of the mayonnaise mixture over the tomatoes. Repeat layers.
  5. Place the pie on a baking sheet and bake for 45 minutes or until the crust is golden and the filling is set.
