Ingredients:
- 3 large eggs, separated (about 150g)
- 3 ounces cream cheese, softened (about 85g)
- 1/4 teaspoon cream of tartar
- 1 tablespoon granulated sweetener (such as erythritol or sugar; optional for taste)
- 1/2 teaspoon garlic powder (optional for flavor)
Instructions:
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- Carefully separate the egg whites from the yolks into two mixing bowls.
- Add cream of tartar to the egg whites. Use an electric mixer to whip the whites until stiff peaks form.
- In the bowl with the egg yolks, add softened cream cheese. Mix until smooth and creamy.
- Gently fold the whipped egg whites into the yolk mixture, adding in the sweetener and garlic powder if using.
- Using a spatula, scoop the mixture onto the prepared baking sheet, forming 8 rounds, about 1/2 inch thick.
- Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown.
- Allow the cloud bread to cool on a wire rack before serving.
