Ingredients:
- 2 cups rolled oats
- ¼ cup unsweetened cocoa powder
- 1 cup granulated sugar
- ½ cup unsalted butter
- ½ cup milk
- 1 tsp vanilla extract
- A pinch of salt
Instructions:
- Line a cookie sheet or plate with parchment paper and set aside.
- In a mixing bowl, combine the rolled oats, cocoa powder, and a pinch of salt. Stir well to mix.
- In a medium saucepan, melt the butter over medium heat. Add the sugar and milk; whisk to combine. Bring the mixture to a boil, then boil for exactly 1 minute while stirring constantly.
- Remove the saucepan from heat, then stir in the vanilla extract. Pour the butter mixture over the dry ingredients and stir until well combined.
- Use a spoon or cookie scoop to drop heaping tablespoons of the mixture onto the prepared parchment paper.
- Refrigerate the cookies for about 30 minutes or until firm.
