Ingredients:

  • 2 cups rolled oats
  • ¼ cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • ½ cup milk
  • 1 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Line a cookie sheet or plate with parchment paper and set aside.
  2. In a mixing bowl, combine the rolled oats, cocoa powder, and a pinch of salt. Stir well to mix.
  3. In a medium saucepan, melt the butter over medium heat. Add the sugar and milk; whisk to combine. Bring the mixture to a boil, then boil for exactly 1 minute while stirring constantly.
  4. Remove the saucepan from heat, then stir in the vanilla extract. Pour the butter mixture over the dry ingredients and stir until well combined.
  5. Use a spoon or cookie scoop to drop heaping tablespoons of the mixture onto the prepared parchment paper.
  6. Refrigerate the cookies for about 30 minutes or until firm.
