Ingredients:
- 16 ounces (450g) full-fat cottage cheese
- 2 tablespoons (30ml) mayonnaise
- 1 tablespoon (15ml) sour cream
- 1/2 cup (75g) dill pickles, finely chopped
- 2 tablespoons (30ml) dill pickle brine
- 2 tablespoons (10g) fresh dill, finely chopped
- 1 tablespoon (5g) fresh chives, finely chopped
- 1 teaspoon (5ml) Dijon mustard
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and freshly ground black pepper to taste
Instructions:
- Place the cottage cheese in a mixing bowl. If you prefer a smoother dip, blend briefly with an immersion blender or food processor until your desired consistency is achieved.
- Stir in the mayonnaise and sour cream (or Greek yogurt) until well combined.
- Add the chopped dill pickles and pickle brine to the mixture.
- Stir in the fresh dill, chives, Dijon mustard, garlic powder, and onion powder.
- Season with salt and pepper to taste. Remember pickles are salty, so add salt carefully!
- For best flavor, cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
- Serve chilled with your favorite dippers.
