Ingredients:

  • 16 ounces (450g) full-fat cottage cheese
  • 2 tablespoons (30ml) mayonnaise
  • 1 tablespoon (15ml) sour cream
  • 1/2 cup (75g) dill pickles, finely chopped
  • 2 tablespoons (30ml) dill pickle brine
  • 2 tablespoons (10g) fresh dill, finely chopped
  • 1 tablespoon (5g) fresh chives, finely chopped
  • 1 teaspoon (5ml) Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Place the cottage cheese in a mixing bowl. If you prefer a smoother dip, blend briefly with an immersion blender or food processor until your desired consistency is achieved.
  2. Stir in the mayonnaise and sour cream (or Greek yogurt) until well combined.
  3. Add the chopped dill pickles and pickle brine to the mixture.
  4. Stir in the fresh dill, chives, Dijon mustard, garlic powder, and onion powder.
  5. Season with salt and pepper to taste. Remember pickles are salty, so add salt carefully!
  6. For best flavor, cover and chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
  7. Serve chilled with your favorite dippers.
