Ingredients:
- 2 cups pumpkin, peeled and diced
- 1 medium onion, chopped
- 2 tablespoons olive oil
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 1 tablespoon all-purpose flour (optional)
- ½ cup sour cream
Instructions:
- Prepare the Ingredients: Peel and dice the pumpkin. Chop the onion.
- Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
- Add the Pumpkin: Stir in the diced pumpkin, thyme, and bay leaf. Season with salt and pepper.
- Simmer the Stew: Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes until the pumpkin is tender.
- Thicken the Stew (Optional): If desired, sprinkle flour into the pot and stir well to combine. Simmer for an additional 5 minutes.
- Blend: Remove bay leaf and use a blender or immersion blender to puree the mixture until smooth.
- Finish with Sour Cream: Stir in sour cream until well combined. Adjust seasoning if necessary.
