  • 1 tablespoon all-purpose flour (optional)
  • ½ cup sour cream

Instructions:

  1. Prepare the Ingredients: Peel and dice the pumpkin. Chop the onion.
  2. Sauté the Aromatics: In a large pot, heat olive oil over medium heat. Add chopped onion and sauté until translucent (about 5 minutes).
  3. Add the Pumpkin: Stir in the diced pumpkin, thyme, and bay leaf. Season with salt and pepper.
  4. Simmer the Stew: Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and simmer for 20 minutes until the pumpkin is tender.

  6. Blend: Remove bay leaf and use a blender or immersion blender to puree the mixture until smooth.
  7. Finish with Sour Cream: Stir in sour cream until well combined. Adjust seasoning if necessary.
