Ingredients:

  • 6 ounces (170g) semi-sweet chocolate chips
  • 2 tablespoons (30ml) unsalted butter
  • 5 ounces (140g) crispy chow mein noodles
  • 1 cup (85g) shredded coconut, sweetened or unsweetened
  • Assorted candy Easter eggs

Instructions:

  1. Combine chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until smooth and melted. Ensure no lumps remain.
  2. Add the chow mein noodles and coconut to the melted chocolate. Gently fold until the noodles and coconut are evenly coated. Don't overmix and break the noodles!
  3. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Gently shape each spoonful into a nest using your fingers or the back of a spoon. Work quickly before the chocolate sets.
  4. Press candy Easter eggs into the center of each nest.
  5. Refrigerate the nests for at least 30 minutes, or until the chocolate is set. This helps them hold their shape.
  6. Once set, remove the nests from the refrigerator and serve.
