Ingredients:
- 6 ounces (170g) semi-sweet chocolate chips
- 2 tablespoons (30ml) unsalted butter
- 5 ounces (140g) crispy chow mein noodles
- 1 cup (85g) shredded coconut, sweetened or unsweetened
- Assorted candy Easter eggs
Instructions:
- Combine chocolate chips and butter in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until smooth and melted. Ensure no lumps remain.
- Add the chow mein noodles and coconut to the melted chocolate. Gently fold until the noodles and coconut are evenly coated. Don't overmix and break the noodles!
- Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper. Gently shape each spoonful into a nest using your fingers or the back of a spoon. Work quickly before the chocolate sets.
- Press candy Easter eggs into the center of each nest.
- Refrigerate the nests for at least 30 minutes, or until the chocolate is set. This helps them hold their shape.
- Once set, remove the nests from the refrigerator and serve.
