Ingredients:

  • 1 lb yellow summer squash, sliced into 1/2-inch rounds
  • 1 lb zucchini, sliced into 1/2-inch rounds
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Instructions:

  1. Slice the yellow summer squash and zucchini into consistent 1/2-inch thick rounds to ensure even cooking.
  2. In a large mixing bowl, toss the squash and zucchini slices with olive oil first to create a moisture barrier.
  3. Sprinkle in the garlic powder, smoked paprika, kosher salt, black pepper, and grated Parmesan cheese. Toss gently until every slice is evenly coated in the seasoning blend.
  4. Place the slices in the air fryer basket, allowing for slight overlap but avoiding tight packing. Air fry at 400°F (200°C) for 18-20 minutes.
  5. Shake the basket halfway through the cooking cycle. The squash is done when the edges are golden-brown and the slices feel slightly firm to the touch.
