Ingredients:
- 1 lb yellow summer squash, sliced into 1/2-inch rounds
- 1 lb zucchini, sliced into 1/2-inch rounds
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 cup grated Parmesan cheese
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Instructions:
- Slice the yellow summer squash and zucchini into consistent 1/2-inch thick rounds to ensure even cooking.
- In a large mixing bowl, toss the squash and zucchini slices with olive oil first to create a moisture barrier.
- Sprinkle in the garlic powder, smoked paprika, kosher salt, black pepper, and grated Parmesan cheese. Toss gently until every slice is evenly coated in the seasoning blend.
- Place the slices in the air fryer basket, allowing for slight overlap but avoiding tight packing. Air fry at 400°F (200°C) for 18-20 minutes.
- Shake the basket halfway through the cooking cycle. The squash is done when the edges are golden-brown and the slices feel slightly firm to the touch.
