Ingredients:

  • 4 cups (500g) all-purpose flour, plus more for dusting
  • 1 teaspoon (5g) baking soda
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (6g) salt
  • ¼ cup (50g) granulated sugar
  • 1 ½ cups (360ml) buttermilk
  • ¼ cup (60ml) melted unsalted butter, plus more for brushing
  • 1 ½ cups (170g) shredded sharp cheddar cheese

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper (or lightly grease).
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, and sugar.
  3. Stir in shredded cheddar cheese until evenly distributed.
  4. In a separate bowl, whisk together buttermilk and melted butter.
  5. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix! Dough will be shaggy.
  6. Turn the dough out onto a lightly floured surface. Gently shape into a round loaf (about 1.5-2 inches thick).
  7. Place the loaf on the prepared baking sheet. Use a sharp knife to score a deep cross (X) on the top of the loaf.
  8. Bake for 35-40 minutes, or until the loaf is golden brown and a toothpick inserted into the center comes out clean.
  9. Let cool on the baking sheet for 10 minutes before transferring to a wire rack to cool completely. Brush with melted butter, if desired, for a golden sheen.
