Ingredients:

  • 2-3 tablespoons (30-45 ml) adobo sauce from a can of chipotle peppers
  • 1-2 chipotle peppers in adobo (finely minced)
  • 1 tablespoon (15 ml) fresh lime juice
  • 1 garlic clove (minced)
  • Salt, to taste

Instructions:

  1. In a mixing bowl, add mayonnaise, adobo sauce, minced chipotle peppers, lime juice, and minced garlic.
  2. Use a whisk or spoon to thoroughly blend all ingredients until smooth.
  3. Taste the mayo and add salt as needed, adjusting spiciness with more adobo sauce or chipotle if desired.
  4. Cover and let the mayo chill in the refrigerator for about 30 minutes to enhance the flavors before serving.
  5. Serve as a dip, spread, or condiment for your favorite dishes.
