Ingredients:

  • 2 pieces Naan or pre-baked Flatbread (approx 170g each)
  • 1 tbsp olive oil
  • 1/2 cup pizza sauce
  • 8 oz fresh mozzarella cheese
  • 1 cup cherry tomatoes
  • 1/4 tsp garlic powder
  • 1/4 tsp dried oregano
  • 1/4 cup fresh basil leaves
  • 2 tbsp balsamic glaze

Instructions:

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Place the flatbreads on the sheet and lightly brush the outer edges with olive oil to ensure a crisp, mahogany-colored crust.
  2. Spread 2-3 tbsp of pizza sauce evenly across each flatbread, leaving a 1/2 inch border. Distribute patted-dry mozzarella evenly over the sauce, then nestle sliced cherry tomatoes into the cheese. Sprinkle with garlic powder and dried oregano.
  3. Bake on the center rack for 10-13 minutes until the cheese is bubbling with golden-brown spots and the edges are firm.
  4. Remove from the oven and let rest for 2 minutes to set the cheese. Scatter fresh basil leaves across the top and drizzle with balsamic glaze in a zig-zag pattern before slicing.
