Ingredients:

  • 1 cup (240 ml) water
  • 1 cup (200 g) granulated sugar
  • ½ cup (60 g) blanched almonds
  • 1 teaspoon (5 ml) pure almond extract
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1 tablespoon (15 ml) freshly squeezed lemon juice (optional, for brightness)

Instructions:

  1. In a medium saucepan, bring 1 cup of water and 1 cup of sugar to a simmer over medium heat.
  2. While the syrup is simmering, add blanched almonds to a blender or food processor, and blend until finely ground.
  3. Add the ground almonds to the simmering syrup. Stir well and let it cook for an additional 5-7 minutes.
  4. Remove the syrup from heat. Allow it to cool slightly before pouring it through a fine mesh strainer or cheesecloth into a bowl or jar.
  5. Stir in almond extract, vanilla extract, and lemon juice (if using).
  6. Transfer the syrup into an airtight container for storage. Allow it to cool completely before sealing.
