Ingredients:
- 1 cup (240 ml) water
- 1 cup (200 g) granulated sugar
- ½ cup (60 g) blanched almonds
- 1 teaspoon (5 ml) pure almond extract
- 1 teaspoon (5 ml) pure vanilla extract
- 1 tablespoon (15 ml) freshly squeezed lemon juice (optional, for brightness)
Instructions:
- In a medium saucepan, bring 1 cup of water and 1 cup of sugar to a simmer over medium heat.
- While the syrup is simmering, add blanched almonds to a blender or food processor, and blend until finely ground.
- Add the ground almonds to the simmering syrup. Stir well and let it cook for an additional 5-7 minutes.
- Remove the syrup from heat. Allow it to cool slightly before pouring it through a fine mesh strainer or cheesecloth into a bowl or jar.
- Stir in almond extract, vanilla extract, and lemon juice (if using).
- Transfer the syrup into an airtight container for storage. Allow it to cool completely before sealing.
