Ingredients:

  • 1.5 lbs center-cut salmon fillet
  • 1 tbsp extra virgin olive oil
  • 1 tbsp unsalted butter, melted
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 3 cloves garlic, minced
  • 1/2 lemon, juiced
  • 1/2 lemon, sliced into thin rounds
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Remove the salmon from the refrigerator 15 minutes before cooking to temper. Pat the skin and flesh completely dry with paper towels.
  2. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
  3. Place the salmon on the prepared baking sheet and season evenly with the sea salt and cracked black pepper.
  4. In a small mixing bowl, whisk together the olive oil, melted butter, lemon juice, minced garlic, and dried oregano until emulsified.
  5. Pour the garlic-butter mixture over the salmon, using a brush or spoon to ensure the top and sides are well coated. Layer the lemon slices across the top of the fillet.
  6. Slide the tray into the center rack of the oven and bake for 10–12 minutes, or until the internal temperature reaches 125-135°F for a perfect medium-rare to medium flake.
  7. Remove from the oven and garnish with fresh chopped parsley before serving.
