Ingredients:
- 1.5 lbs center-cut salmon fillet
- 1 tbsp extra virgin olive oil
- 1 tbsp unsalted butter, melted
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 3 cloves garlic, minced
- 1/2 lemon, juiced
- 1/2 lemon, sliced into thin rounds
- 1 tsp dried oregano
- 1 tbsp fresh parsley, chopped
Instructions:
- Remove the salmon from the refrigerator 15 minutes before cooking to temper. Pat the skin and flesh completely dry with paper towels.
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper.
- Place the salmon on the prepared baking sheet and season evenly with the sea salt and cracked black pepper.
- In a small mixing bowl, whisk together the olive oil, melted butter, lemon juice, minced garlic, and dried oregano until emulsified.
- Pour the garlic-butter mixture over the salmon, using a brush or spoon to ensure the top and sides are well coated. Layer the lemon slices across the top of the fillet.
- Slide the tray into the center rack of the oven and bake for 10–12 minutes, or until the internal temperature reaches 125-135°F for a perfect medium-rare to medium flake.
- Remove from the oven and garnish with fresh chopped parsley before serving.
