Ingredients:

  • 1 cup (90g) rolled oats (old-fashioned oats, not instant)
  • 1 cup (240ml) milk of choice (dairy or non-dairy)
  • ½ cup (120g) pumpkin purée
  • 2 tablespoons (14g) chia seeds
  • 2-3 tablespoons (30-45ml) maple syrup or honey
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • Optional toppings: Chopped nuts, granola, yogurt, whipped cream, nut butter

Instructions:

  1. In your mason jar or bowl, add the rolled oats, milk, pumpkin purée, chia seeds, maple syrup/honey, pumpkin pie spice, and vanilla extract.
  2. Stir thoroughly to ensure all ingredients are evenly distributed.
  3. Cover the jar or bowl tightly and refrigerate for at least 4 hours, or preferably overnight.
  4. Before serving, give the oats a good stir. If they seem too thick, add a splash of milk until you reach your desired consistency.
  5. Transfer to a bowl if you used a mason jar. Add your favorite toppings, such as chopped nuts, granola, a dollop of yogurt, or a drizzle of nut butter.
  6. Dig in!
