Ingredients:

  • 4 cups fresh strawberries, hulled and diced
  • 1/4 cup red onion or shallot, finely minced
  • 1 medium jalapeño, finely minced (seeds optional)
  • 2 Tbsp fresh mint, chopped
  • 2 Tbsp fresh cilantro, chopped
  • 3 Tbsp freshly squeezed lime juice
  • 1 tsp sugar or honey (optional)
  • 1/2 tsp kosher salt
  • Black pepper, freshly ground, to taste

Instructions:

  1. Thoroughly wash and hull the strawberries. Dice the strawberries to a uniform 1/4-inch (6 mm) size. Ensure the red onion and jalapeño are finely minced for even distribution of flavor.
  2. In a large mixing bowl, gently combine the diced strawberries, minced red onion, jalapeño, mint, and cilantro. Use a rubber spatula to avoid crushing the fruit.
  3. Pour the fresh lime juice over the fruit mixture. Add the sugar (if using), kosher salt, and black pepper.
  4. Gently stir to incorporate all ingredients. Taste the salsa and adjust the seasoning based on the sweetness of the strawberries (add more lime for tang, or more sugar for balance).
  5. Cover the bowl and refrigerate the salsa for a minimum of 30 minutes, and ideally up to 2 hours. This chilling period allows the flavors to deepen and marry beautifully.
  6. Just before serving, give the salsa a final stir and check the seasoning one last time. Serve chilled.
