Ingredients:
- 4 cups fresh strawberries, hulled and diced
- 1/4 cup red onion or shallot, finely minced
- 1 medium jalapeño, finely minced (seeds optional)
- 2 Tbsp fresh mint, chopped
- 2 Tbsp fresh cilantro, chopped
- 3 Tbsp freshly squeezed lime juice
- 1 tsp sugar or honey (optional)
- 1/2 tsp kosher salt
- Black pepper, freshly ground, to taste
Instructions:
- Thoroughly wash and hull the strawberries. Dice the strawberries to a uniform 1/4-inch (6 mm) size. Ensure the red onion and jalapeño are finely minced for even distribution of flavor.
- In a large mixing bowl, gently combine the diced strawberries, minced red onion, jalapeño, mint, and cilantro. Use a rubber spatula to avoid crushing the fruit.
- Pour the fresh lime juice over the fruit mixture. Add the sugar (if using), kosher salt, and black pepper.
- Gently stir to incorporate all ingredients. Taste the salsa and adjust the seasoning based on the sweetness of the strawberries (add more lime for tang, or more sugar for balance).
- Cover the bowl and refrigerate the salsa for a minimum of 30 minutes, and ideally up to 2 hours. This chilling period allows the flavors to deepen and marry beautifully.
- Just before serving, give the salsa a final stir and check the seasoning one last time. Serve chilled.
