Ingredients:
- 2 1/2 cups (300g) all-purpose flour, plus more for dusting
- 1 teaspoon (6g) salt
- 1 cup (227g) cold unsalted butter, cut into 1/2-inch cubes
- 1/2 cup (120ml) ice water
- 1 large egg, beaten (for egg wash)
- 2 tablespoons Everything Bagel Seasoning
- 1 pound (450g) farmers cheese, drained well
- 1/4 cup (60ml) sour cream
- 1/4 cup (packed) chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh dill
- 1 large egg yolk
- 1/4 teaspoon (1.5g) garlic powder
- 1/4 teaspoon (1.5g) onion powder
- Salt and freshly ground black pepper to taste
Instructions:
- Combine flour and salt in a food processor (or large bowl). Pulse in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, pulsing (or mixing) until the dough just comes together.
- Form the dough into a disc, wrap in plastic wrap, and chill for at least 1 hour.
- In a medium bowl, combine the farmers cheese, sour cream, parsley, chives, dill, egg yolk, garlic powder, onion powder, salt, and pepper. Mix well.
- On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut out circles using a cookie cutter or bowl (about 4-5 inches in diameter).
- Place a generous spoonful of the farmers cheese filling in the center of each circle. Fold the dough over to form a half-moon shape. Crimp the edges with a fork to seal.
- Place the hand pies on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with everything bagel seasoning.
- Bake in a preheated oven (375°F / 190°C) for 25-30 minutes, or until golden brown. For optimal results with farmers cheese recipes, ensure the crust is fully baked.
- Let the hand pies cool slightly on the baking sheet before serving.
