Ingredients:

  • 2 1/2 cups (300g) all-purpose flour, plus more for dusting
  • 1 teaspoon (6g) salt
  • 1 cup (227g) cold unsalted butter, cut into 1/2-inch cubes
  • 1/2 cup (120ml) ice water
  • 1 large egg, beaten (for egg wash)
  • 2 tablespoons Everything Bagel Seasoning
  • 1 pound (450g) farmers cheese, drained well
  • 1/4 cup (60ml) sour cream
  • 1/4 cup (packed) chopped fresh parsley
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh dill
  • 1 large egg yolk
  • 1/4 teaspoon (1.5g) garlic powder
  • 1/4 teaspoon (1.5g) onion powder
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Combine flour and salt in a food processor (or large bowl). Pulse in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, pulsing (or mixing) until the dough just comes together.
  2. Form the dough into a disc, wrap in plastic wrap, and chill for at least 1 hour.
  3. In a medium bowl, combine the farmers cheese, sour cream, parsley, chives, dill, egg yolk, garlic powder, onion powder, salt, and pepper. Mix well.
  4. On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Cut out circles using a cookie cutter or bowl (about 4-5 inches in diameter).
  5. Place a generous spoonful of the farmers cheese filling in the center of each circle. Fold the dough over to form a half-moon shape. Crimp the edges with a fork to seal.
  6. Place the hand pies on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with everything bagel seasoning.
  7. Bake in a preheated oven (375°F / 190°C) for 25-30 minutes, or until golden brown. For optimal results with farmers cheese recipes, ensure the crust is fully baked.
  8. Let the hand pies cool slightly on the baking sheet before serving.
