Ingredients:
- 4 large eggs (200g)
- 1 cup granulated sugar (200g)
- 1 cup all-purpose flour (120g)
- 1 teaspoon baking powder (4g)
- 1 teaspoon vanilla extract (5ml)
- Pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C). Grease and line the bottom of a round cake pan with parchment paper.
- In a large mixing bowl, separate the egg yolks from the whites, placing them in different bowls. Add half of the sugar (100g) to the yolks and whisk until pale and frothy, then add vanilla extract.
- In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining sugar (100g) while continuing to whip until firm, glossy peaks form.
- Gently fold the whipped egg whites into the egg yolk mixture in three additions, being careful not to deflate the mixture.
- Sift the flour and baking powder over the batter and gently fold until no streaks remain.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then remove from the pan and cool completely on a wire rack.
