Ingredients:
- 2 cups (240g) biscuit baking mix (such as Bisquick or Jiffy)
- 1 ½ cups (360ml) milk
- 2 large eggs
- 2 tablespoons (30ml) melted unsalted butter, plus more for greasing the griddle
- 1 teaspoon vanilla extract
- Optional: 2 tablespoons (25g) granulated sugar
Instructions:
- In a large bowl, whisk together the biscuit mix, milk, eggs, melted butter, vanilla extract, and sugar (if using). Whisk until just combined; a few lumps are perfectly fine – overmixing leads to tough pancakes!
- Heat a lightly greased griddle or non-stick skillet over medium heat. You want the surface hot enough that a drop of water sizzles and evaporates within a few seconds.
- Pour ¼ cup of batter onto the hot griddle for each pancake.
- Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
- Serve hot with your favorite toppings.
