Ingredients:

  • 2 cups (240g) biscuit baking mix (such as Bisquick or Jiffy)
  • 1 ½ cups (360ml) milk
  • 2 large eggs
  • 2 tablespoons (30ml) melted unsalted butter, plus more for greasing the griddle
  • 1 teaspoon vanilla extract
  • Optional: 2 tablespoons (25g) granulated sugar

Instructions:

  1. In a large bowl, whisk together the biscuit mix, milk, eggs, melted butter, vanilla extract, and sugar (if using). Whisk until just combined; a few lumps are perfectly fine – overmixing leads to tough pancakes!
  2. Heat a lightly greased griddle or non-stick skillet over medium heat. You want the surface hot enough that a drop of water sizzles and evaporates within a few seconds.
  3. Pour ¼ cup of batter onto the hot griddle for each pancake.
  4. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip when bubbles start to form on the surface and the edges look set.
  5. Serve hot with your favorite toppings.
