Ingredients:
- 2 cups (240g) all-purpose flour
- 1 ½ cups (300g) granulated sugar
- ½ cup (120ml) whole milk
- ½ cup (120ml) vegetable oil
- 4 large eggs (separated)
- 1 tablespoon (15g) baking powder
- 1 teaspoon (5g) vanilla extract
- Zest of 1 lemon
- 4 large egg whites
- ½ cup (100g) granulated sugar
- A pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C) and grease the baking dish.
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, mix egg yolks, sugar, milk, oil, vanilla extract, and lemon zest until smooth.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- In a clean bowl, beat egg whites to soft peaks.
- Gradually add sugar and continue beating until stiff peaks form.
- Gently fold the whipped egg whites into the sponge batter using a rubber spatula.
- Pour the batter into the prepared baking dish and bake for 35 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and enjoy!
