Ingredients:

  • 2 cups (240g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • ½ cup (120ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 4 large eggs (separated)
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (5g) vanilla extract
  • Zest of 1 lemon
  • 4 large egg whites
  • ½ cup (100g) granulated sugar
  • A pinch of salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease the baking dish.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. In another bowl, mix egg yolks, sugar, milk, oil, vanilla extract, and lemon zest until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  5. In a clean bowl, beat egg whites to soft peaks.
  6. Gradually add sugar and continue beating until stiff peaks form.
  7. Gently fold the whipped egg whites into the sponge batter using a rubber spatula.
  8. Pour the batter into the prepared baking dish and bake for 35 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely. Slice and enjoy!
