Ingredients:

  • 1 cup (120 g) all-purpose flour
  • 2 tablespoons (25 g) granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg, lightly beaten
  • 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tablespoon vinegar)
  • 2 tablespoons (30 g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Maple syrup
  • Fresh berries
  • Whipped cream

Instructions:

  1. In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; mix well.
  2. In another bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients; mix until just combined (lumps are okay).
  4. Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup of batter for each flapjack onto the skillet.
  6. Cook until bubbles form on the surface and edges look set (about 2-3 minutes).
  7. Flip and cook until golden brown on the other side (another 1-2 minutes).
  8. Repeat with remaining batter.
  9. Serve warm with toppings of your choice.
