Ingredients:
- 1 cup (120 g) all-purpose flour
- 2 tablespoons (25 g) granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 large egg, lightly beaten
- 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tablespoon vinegar)
- 2 tablespoons (30 g) unsalted butter, melted
- 1 teaspoon vanilla extract
- Maple syrup
- Fresh berries
- Whipped cream
Instructions:
- In a large bowl, combine flour, sugar, baking powder, baking soda, and salt; mix well.
- In another bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients; mix until just combined (lumps are okay).
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter for each flapjack onto the skillet.
- Cook until bubbles form on the surface and edges look set (about 2-3 minutes).
- Flip and cook until golden brown on the other side (another 1-2 minutes).
- Repeat with remaining batter.
- Serve warm with toppings of your choice.
