- 1 cup (240ml) kefir
- 1 large egg
- 2 tablespoons (30g) sugar
- 1 teaspoon vanilla extract
- 1 cup (120g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons (30g) unsalted butter, melted
- Optional: 1/2 cup (75g) fresh berries or chopped fruit
Instructions:
- Prepare the Batter: In a large mixing bowl, combine kefir, egg, sugar, and vanilla extract; whisk until smooth. In another bowl, sift together flour, baking powder, baking soda, and salt. Gradually add dry ingredients to the wet mixture while whisking until just combined (do not overmix). Fold in melted butter and any optional fruits.
- Heat the Griddle: Preheat a griddle or skillet over medium heat; lightly grease with butter or oil.
- Cook the Pancakes: Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form and edges are set (about 2-3 minutes). Flip and cook for an additional 2-3 minutes or until golden brown.
