Ingredients:

  • 1 cup all-purpose flour (120g)
  • 2 tablespoons granulated sugar (25g)
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup plain yogurt (240ml)
  • 2 large eggs
  • 1/4 cup milk (60ml)
  • 2 tablespoons unsalted butter, melted (28g)
  • 1 teaspoon vanilla extract

Instructions:

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well mixed.
  2. In a separate bowl, stir together the yogurt, eggs, milk, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients, gently mixing until just combined. Avoid over-mixing; a few lumps are okay.
  4. Heat a non-stick skillet or griddle over medium heat. Lightly grease if necessary.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes.
  6. Flip the pancakes and cook for an additional 2–3 minutes, or until golden brown.
  7. Stack pancakes on plates and serve warm with your choice of toppings.
