Ingredients:
- 1 cup all-purpose flour (120g)
- 2 tablespoons granulated sugar (25g)
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup plain yogurt (240ml)
- 2 large eggs
- 1/4 cup milk (60ml)
- 2 tablespoons unsalted butter, melted (28g)
- 1 teaspoon vanilla extract
Instructions:
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well mixed.
- In a separate bowl, stir together the yogurt, eggs, milk, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients, gently mixing until just combined. Avoid over-mixing; a few lumps are okay.
- Heat a non-stick skillet or griddle over medium heat. Lightly grease if necessary.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2–3 minutes.
- Flip the pancakes and cook for an additional 2–3 minutes, or until golden brown.
- Stack pancakes on plates and serve warm with your choice of toppings.
