Ingredients:

  • 1 lb (450g) Ziti pasta
  • 1 tbsp (15ml) Olive oil
  • 15 oz (425g) Whole milk ricotta cheese
  • 2 cups (225g) Shredded low-moisture mozzarella cheese
  • 1/2 cup (50g) Freshly grated Parmesan cheese
  • 1 cup (115g) Shredded fontina cheese
  • 1 large (50g) Egg, lightly beaten
  • 24 oz (680g) Marinara sauce
  • 3 cloves (15g) Garlic, minced
  • 1/4 cup (10g) Fresh parsley, chopped

Instructions:

  1. Bring a large pot of salted water to a rolling boil.
  2. Add ziti and cook for 2-3 minutes less than the 'al dente' package instructions until the pasta still has a firm bite.
  3. Drain the pasta in a colander and toss with 1 tbsp (15ml) of olive oil to prevent clumping.
  4. In a large mixing bowl, combine the ricotta cheese, beaten egg, half of the Parmesan cheese, and the chopped parsley.
  5. Fold in 1 cup (115g) of the mozzarella cheese and the fontina cheese. Stir until the mixture is uniform and thick.
  6. Preheat the oven to 375°F (190°C).
  7. Pour approximately 1 cup (240ml) of marinara sauce into the bottom of a 9x13 inch baking dish.
  8. Mix the undercooked ziti with the remaining marinara sauce and minced garlic until every tube is coated.
  9. Layer half of the pasta into the dish, then spread the ricotta mixture evenly over the top.
  10. Top with the remaining pasta, then sprinkle the remaining mozzarella and Parmesan cheese over the surface.
  11. Bake for 30 minutes or until the cheese is bubbly and golden brown.
