Ingredients:

  • 8 medium ripe tomatoes (approx. 2-2.5 lbs / 900-1130 g)
  • 1 small onion, chopped (approx. 1/2 cup / 75 g)
  • 1 clove garlic, minced
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (2 g)
  • 1 tablespoon sugar (optional, 15 g for sweetness)
  • 1 tablespoon lemon juice (15 ml)
  • Fresh basil leaves (for garnish, optional)

Instructions:

  1. Wash tomatoes and remove the stems. Cut them into quarters for easier blending.
  2. In a blender, combine the quartered tomatoes, chopped onion, minced garlic, salt, pepper, and sugar (if using). Blend until smooth.
  3. Pour the blended mixture through a fine mesh strainer or cheesecloth into a large pot. Use a spatula or spoon to press down and extract as much juice as possible.
  4. Place the strained juice over medium heat. Stir in lemon juice, and bring to a gentle simmer for about 10 minutes, allowing flavors to meld.
  5. After cooking, taste and adjust seasoning as needed (more salt, pepper, or sugar). Remove from heat and let cool.
  6. Serve chilled, garnished with fresh basil, or store in airtight containers in the refrigerator.
