Ingredients:
- 1 cup (240ml) Plain Greek Yogurt
- 1/2 cup (60g) Fresh Blueberries
- 2 tablespoons (30ml) Honey or Maple Syrup
- 1 teaspoon (5ml) Lemon Juice (optional)
- Optional toppings: shredded coconut, chopped nuts, mini chocolate chips
Instructions:
- In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and lemon juice (if using). Stir until smooth and well combined.
- Gently fold in the blueberries, being careful not to crush them.
- Line a baking sheet with parchment paper or a silicone baking mat. Using a small cookie scoop or a teaspoon, drop small spoonfuls of the yogurt mixture onto the prepared baking sheet.
- If desired, sprinkle the yogurt bites with shredded coconut, chopped nuts, or mini chocolate chips.
- Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the bites are solid.
- Once frozen, carefully transfer the bites to a freezer-safe container or bag. Store in the freezer for up to 2 weeks.
