Ingredients:

  • 1 cup (240ml) Plain Greek Yogurt
  • 1/2 cup (60g) Fresh Blueberries
  • 2 tablespoons (30ml) Honey or Maple Syrup
  • 1 teaspoon (5ml) Lemon Juice (optional)
  • Optional toppings: shredded coconut, chopped nuts, mini chocolate chips

Instructions:

  1. In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and lemon juice (if using). Stir until smooth and well combined.
  2. Gently fold in the blueberries, being careful not to crush them.
  3. Line a baking sheet with parchment paper or a silicone baking mat. Using a small cookie scoop or a teaspoon, drop small spoonfuls of the yogurt mixture onto the prepared baking sheet.
  4. If desired, sprinkle the yogurt bites with shredded coconut, chopped nuts, or mini chocolate chips.
  5. Place the baking sheet in the freezer and freeze for at least 2-3 hours, or until the bites are solid.
  6. Once frozen, carefully transfer the bites to a freezer-safe container or bag. Store in the freezer for up to 2 weeks.
