Ingredients:
- 2 cups (225g) finely shredded zucchini
- 1/2 cup (110g) neutral oil
- 1 cup (200g) granulated sugar
- 2 large (100g) eggs
- 1 tsp (5ml) pure vanilla extract
- 1 cup (125g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1/2 tsp (3g) baking soda
- 1/2 tsp (3g) sea salt
- 1/2 cup (85g) semi-sweet chocolate chips
- 1/2 cup (60g) chopped walnuts
Instructions:
- Grate the zucchini using the fine side of the grater. Place the shreds into a clean kitchen towel and twist tightly over the sink. Squeeze until no more large droplets of water escape.
- Preheat your oven to 350°F (175°C). Line your 9x9 inch pan with parchment paper, leaving an overhang on the sides for easy lifting.
- In a large bowl, whisk together the oil, sugar, eggs, and vanilla until the mixture is smooth and slightly pale.
