Ingredients:

  • 2 cups (225g) finely shredded zucchini
  • 1/2 cup (110g) neutral oil
  • 1 cup (200g) granulated sugar
  • 2 large (100g) eggs
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (3g) sea salt
  • 1/2 cup (85g) semi-sweet chocolate chips
  • 1/2 cup (60g) chopped walnuts

Instructions:

  1. Grate the zucchini using the fine side of the grater. Place the shreds into a clean kitchen towel and twist tightly over the sink. Squeeze until no more large droplets of water escape.
  2. Preheat your oven to 350°F (175°C). Line your 9x9 inch pan with parchment paper, leaving an overhang on the sides for easy lifting.
  3. In a large bowl, whisk together the oil, sugar, eggs, and vanilla until the mixture is smooth and slightly pale.
