Ingredients:

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 cup (115g) all-purpose flour
  • 1/2 cup (45g) cocoa powder
  • 1/2 tsp (3g) baking soda
  • 1/4 tsp (1.5g) salt
  • 1 cup (130g) zucchini, finely shredded
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/2 cup (90g) semi-sweet chocolate chips (for ganache)
  • 1/4 cup (60ml) heavy cream (for ganache)

Instructions:

  1. Grate the zucchini using the smallest holes on your grater.
  2. Use a paper towel to gently press out excess water from the zucchini shreds to prevent soggy brownies.
  3. Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
  4. In a large bowl, whisk together the melted butter and sugar until smooth.
  5. Beat in the eggs and vanilla extract one at a time until the mixture looks glossy.
  6. Sift in the flour, cocoa powder, baking soda, and salt. Stir with a spatula until just combined; do not overmix.
  7. Fold in the shredded zucchini and chocolate chips.
  8. Spread the batter evenly into the prepared pan and bake for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
