Ingredients:
- 1/2 cup (115g) unsalted butter, melted
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 cup (115g) all-purpose flour
- 1/2 cup (45g) cocoa powder
- 1/2 tsp (3g) baking soda
- 1/4 tsp (1.5g) salt
- 1 cup (130g) zucchini, finely shredded
- 1/2 cup (90g) semi-sweet chocolate chips
- 1/2 cup (90g) semi-sweet chocolate chips (for ganache)
- 1/4 cup (60ml) heavy cream (for ganache)
Instructions:
- Grate the zucchini using the smallest holes on your grater.
- Use a paper towel to gently press out excess water from the zucchini shreds to prevent soggy brownies.
- Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan.
- In a large bowl, whisk together the melted butter and sugar until smooth.
- Beat in the eggs and vanilla extract one at a time until the mixture looks glossy.
- Sift in the flour, cocoa powder, baking soda, and salt. Stir with a spatula until just combined; do not overmix.
- Fold in the shredded zucchini and chocolate chips.
- Spread the batter evenly into the prepared pan and bake for 25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
