Ingredients:

  • 1.5 cups (150g) finely shredded zucchini, squeezed dry
  • 0.5 cup (115g) melted unsalted butter
  • 0.75 cup (150g) granulated sugar
  • 2 large eggs
  • 1 tsp (5ml) pure vanilla extract
  • 0.5 cup (65g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 0.5 tsp (2g) baking powder
  • 0.25 tsp (1g) salt
  • 0.75 cup (130g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. Place the shredded zucchini in a clean kitchen towel or paper towels and squeeze firmly to remove excess water.
  3. In a large bowl, whisk together the melted butter and sugar. Add eggs one at a time, beating well after each, then stir in the vanilla extract and the squeezed zucchini.
  4. Sift the flour, cocoa powder, baking powder, and salt into the wet mixture. Gently fold with a rubber spatula until no streaks of flour remain.
  5. Stir in the chocolate chips until evenly distributed.
  6. Spread the batter evenly in the prepared pan and bake for 35 minutes.
