Ingredients:
- 1.5 cups (150g) finely shredded zucchini, squeezed dry
- 0.5 cup (115g) melted unsalted butter
- 0.75 cup (150g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) pure vanilla extract
- 0.5 cup (65g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 0.5 tsp (2g) baking powder
- 0.25 tsp (1g) salt
- 0.75 cup (130g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C) and line a 9x9 inch baking pan with parchment paper, leaving an overhang on the sides.
- Place the shredded zucchini in a clean kitchen towel or paper towels and squeeze firmly to remove excess water.
- In a large bowl, whisk together the melted butter and sugar. Add eggs one at a time, beating well after each, then stir in the vanilla extract and the squeezed zucchini.
- Sift the flour, cocoa powder, baking powder, and salt into the wet mixture. Gently fold with a rubber spatula until no streaks of flour remain.
- Stir in the chocolate chips until evenly distributed.
- Spread the batter evenly in the prepared pan and bake for 35 minutes.
