Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 0.5 tsp (3g) baking soda
  • 0.5 tsp (3g) salt
  • 0.5 cup (115g) unsalted butter, melted and cooled
  • 1 cup (200g) brown sugar, packed
  • 2 large eggs
  • 1 tsp (5ml) vanilla extract
  • 1 cup (120g) grated zucchini, squeezed dry
  • 1 cup (170g) semi-sweet chocolate chips
  • 0.5 cup (60g) chopped walnuts

Instructions:

  1. Grate the zucchini using the fine side of the grater. Place the shreds into a kitchen towel and squeeze firmly over the sink to remove excess water.
  2. In a large bowl, whisk together the melted butter and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Sift in the flour, cocoa powder, baking soda, and salt. Fold gently with a spatula until just combined.
  4. Fold in the squeezed zucchini and chocolate chips until evenly distributed.
  5. Pour the batter into a parchment-lined 8x8 inch baking pan. Bake at 350°F (175°C) for 20-25 minutes until a toothpick comes out with a few moist crumbs.
