Ingredients:
- 1 lb ground chicken
- 1/4 cup breadcrumbs (preferably panko)
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp dried Italian herbs
- Salt and pepper to taste
- 1 tbsp olive oil for grilling
- 1/2 cup crumbled Gorgonzola cheese
- 1/4 cup Greek yogurt or sour cream
- 1 tbsp lemon juice (freshly squeezed)
- 1/4 cup cherry tomatoes, chopped
- 1/4 cup red onion, finely diced
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, onion powder, Italian herbs, salt, and pepper.
- Thoroughly mix with your hands until just combined. Form mixture into four equal patties, about 3/4-inch thick.
- Cover and refrigerate the patties for at least 30 minutes to firm up.
- In a separate bowl, mix Gorgonzola cheese, Greek yogurt (or sour cream), lemon juice, cherry tomatoes, red onion, parsley, salt, and pepper until well combined.
- Preheat the grill to medium-high heat. Brush grill grates with olive oil to prevent sticking.
- Place patties on the grill, cooking for about 5-7 minutes on each side.
- Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
- Remove patties from the grill, topping each with a generous scoop of Gorgonzola salsa. Serve on buns or lettuce wraps, as desired.
