Ingredients:

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs (preferably panko)
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp dried Italian herbs
  • Salt and pepper to taste
  • 1 tbsp olive oil for grilling
  • 1/2 cup crumbled Gorgonzola cheese
  • 1/4 cup Greek yogurt or sour cream
  • 1 tbsp lemon juice (freshly squeezed)
  • 1/4 cup cherry tomatoes, chopped
  • 1/4 cup red onion, finely diced
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, onion powder, Italian herbs, salt, and pepper.
  2. Thoroughly mix with your hands until just combined. Form mixture into four equal patties, about 3/4-inch thick.
  3. Cover and refrigerate the patties for at least 30 minutes to firm up.
  4. In a separate bowl, mix Gorgonzola cheese, Greek yogurt (or sour cream), lemon juice, cherry tomatoes, red onion, parsley, salt, and pepper until well combined.
  5. Preheat the grill to medium-high heat. Brush grill grates with olive oil to prevent sticking.
  6. Place patties on the grill, cooking for about 5-7 minutes on each side.
  7. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C).
  8. Remove patties from the grill, topping each with a generous scoop of Gorgonzola salsa. Serve on buns or lettuce wraps, as desired.
