Ingredients:

  • 2 cups (480 ml) vodka (70 proof)
  • 1 cup (240 ml) water
  • 1 cup (200 g) granulated sugar
  • 1 cup of fresh herbs (e.g., mint, basil, or lemon balm)
  • 1 tablespoon dried chamomile flowers (optional)
  • 1 vanilla bean, split (optional)
  • Zest of 1 lemon (optional)

Instructions:

  1. Rinse the fresh herbs under cold water and pat dry. Gently bruise the herbs to release their oils.
  2. In a glass jar, combine the vodka and herbs. Seal the jar tightly and store in a cool, dark place for 1-2 weeks, shaking gently every few days.
  3. In a saucepan, heat water and sugar over medium heat until dissolved. Allow to cool completely.
  4. After infusion, strain the herbs using a fine-mesh strainer or cheesecloth into a bowl. Press gently to extract all liquid.
  5. In a clean jar, combine the herbal infusion with the simple syrup. Add optional vanilla bean and lemon zest. Taste and adjust sweetness or herbal notes as desired.
  6. Using a funnel, transfer the cordial into sterilized bottle(s) and seal tightly.
