Ingredients:
- 1 cup (240 ml) of olive oil
- 10 cloves of garlic, peeled and minced
- 1/4 cup (60 ml) of fresh lime juice (about 2-3 limes)
- 1/4 cup (60 ml) of fresh orange juice (about 1 orange)
- 2 teaspoons (10 g) of sea salt
- 1 teaspoon (5 g) of black pepper
- 1 teaspoon (5 g) of cumin
- 1 teaspoon (5 g) of dried oregano
- 1/4 teaspoon (1 g) of red pepper flakes (optional)
- Zest of 1 lime
Instructions:
- Mince the garlic cloves and juice and zest the limes and orange.
- In a medium saucepan, warm the olive oil over medium heat.
- Add minced garlic to the oil. Sauté for 2-3 minutes until fragrant and lightly golden.
- Remove the pan from heat and whisk in lime juice, orange juice, salt, pepper, cumin, oregano, and red pepper flakes.
- Allow the mixture to cool, then transfer to a jar and mix in lime zest before sealing.
