Ingredients:

  • 1 cup (240 ml) of olive oil
  • 10 cloves of garlic, peeled and minced
  • 1/4 cup (60 ml) of fresh lime juice (about 2-3 limes)
  • 1/4 cup (60 ml) of fresh orange juice (about 1 orange)
  • 2 teaspoons (10 g) of sea salt
  • 1 teaspoon (5 g) of black pepper
  • 1 teaspoon (5 g) of cumin
  • 1 teaspoon (5 g) of dried oregano
  • 1/4 teaspoon (1 g) of red pepper flakes (optional)
  • Zest of 1 lime

Instructions:

  1. Mince the garlic cloves and juice and zest the limes and orange.
  2. In a medium saucepan, warm the olive oil over medium heat.
  3. Add minced garlic to the oil. Sauté for 2-3 minutes until fragrant and lightly golden.
  4. Remove the pan from heat and whisk in lime juice, orange juice, salt, pepper, cumin, oregano, and red pepper flakes.
  5. Allow the mixture to cool, then transfer to a jar and mix in lime zest before sealing.
