Instructions:
- Preheat oven to 400°F (200°C). Line a large, sturdy baking sheet with parchment paper if using.
- Peel and dice sweet potatoes into uniform 1-inch cubes. Ensure uniformity for even cooking.
- In a large mixing bowl, combine the olive oil, minced garlic, chopped rosemary, thyme, salt, and black pepper. Whisk briefly.
- Add the diced sweet potatoes to the bowl and toss thoroughly until every piece is evenly coated in the herb and oil mixture.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary to ensure they roast, not steam.
- Place in the preheated oven and roast for 20 minutes.
- Remove the potatoes from the oven. Gently toss them with a spatula, then sprinkle the grated Parmesan evenly over the top.
- Return to the oven for another 10–15 minutes, or until the potatoes are fork-tender and the Parmesan is golden brown and crispy at the edges.
- Taste and adjust seasoning if necessary. Serve the Garlic-Herb Roasted Sweet Potatoes with Parmesan immediately while hot.
