Ingredients:

  • 1 cup Full-Fat Mayonnaise
  • 1/2 cup Liquid Honey (mild flavour)
  • 1/4 cup Dijon Mustard
  • 2 tablespoons Yellow Mustard (American style)
  • 1 tablespoon Fresh Lemon Juice (or high-quality Apple Cider Vinegar)
  • 1/2 teaspoon Fine Sea Salt
  • 1/4 teaspoon Freshly Ground Black Pepper
  • Pinch Ground Turmeric (Optional, for color)

Instructions:

  1. In a medium bowl, combine the Dijon mustard and the yellow mustard. Whisk thoroughly until fully blended.
  2. Pour in the liquid honey and the lemon juice (or ACV). Whisk again vigorously until the mixture is uniform and slightly emulsified.
  3. Add the full-fat mayonnaise to the mustard and honey mixture.
  4. Using the whisk, blend the ingredients gently but thoroughly until no streaks of mayonnaise remain and the sauce is perfectly smooth.
  5. Add the salt, pepper, and the pinch of turmeric (if using). Whisk well to distribute the seasonings evenly.
  6. Taste the sauce and adjust seasoning: add another teaspoon of lemon juice if too sweet, or a dash more Dijon if a richer kick is desired.
  7. Transfer the sauce to an airtight container. Refrigerate for a minimum of 30 minutes. This chilling period is crucial for achieving restaurant-quality flavor depth.
  8. Remove from the fridge, whisk briefly to refresh, and serve as a dip, dressing, or glaze.
