Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each), pounded to ½ inch thickness
  • 1 large egg, lightly beaten
  • 1 tablespoon milk (any kind)
  • 1/2 cup (60g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (100g) grated Parmesan cheese, finely grated
  • 1/2 cup (50g) panko breadcrumbs
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon garlic powder
  • 2 tablespoons olive oil
  • Lemon wedges (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Pound the chicken breasts to an even thickness.
  2. In separate shallow dishes, place flour mixture, egg mixture, and Parmesan crust mixture.
  3. Dredge each chicken breast in flour, dip in egg wash, then coat thoroughly with Parmesan crust.
  4. Place breaded chicken breasts on a prepared baking sheet. Drizzle with olive oil.
  5. Bake at 400°F (200°C) for 25-30 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
