Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each), pounded to ½ inch thickness
- 1 large egg, lightly beaten
- 1 tablespoon milk (any kind)
- 1/2 cup (60g) all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup (100g) grated Parmesan cheese, finely grated
- 1/2 cup (50g) panko breadcrumbs
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon garlic powder
- 2 tablespoons olive oil
- Lemon wedges (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Pound the chicken breasts to an even thickness.
- In separate shallow dishes, place flour mixture, egg mixture, and Parmesan crust mixture.
- Dredge each chicken breast in flour, dip in egg wash, then coat thoroughly with Parmesan crust.
- Place breaded chicken breasts on a prepared baking sheet. Drizzle with olive oil.
- Bake at 400°F (200°C) for 25-30 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
