Ingredients:

  • 6 medium apples (Granny Smith, Honeycrisp, or a mix), peeled, cored, and sliced (approximately 1.3 kg)
  • ¼ cup (50g) granulated sugar
  • 2 tablespoons (14g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 tablespoon lemon juice
  • 2 tablespoons (30ml) water
  • 1 cup (125g) all-purpose flour
  • ½ cup (100g) packed light brown sugar
  • ½ cup (50g) rolled oats (not instant)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113g) unsalted butter, cold and cut into small cubes
  • 1 ½ cups all purpose flour
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed
  • ¼ cup ice water

Instructions:

  1. In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, cloves, lemon juice, and water. Toss gently to coat.
  2. In a separate bowl, whisk together flour, brown sugar, oats, cinnamon, and salt. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. (Chill if kitchen is warm).
  3. Combine the flour and salt in a bowl, cut in the butter. Gradually add water until dough form. Wrap and chill for 30 minutes.
  4. Preheat oven to 375°F (190°C)
  5. If making a crust, roll out on floured surface and place in pie dish. Crimp edges.
  6. Pour the apple filling into the pie plate.
  7. Evenly sprinkle the streusel topping over the apples.
  8. Bake for 45-55 minutes, or until the topping is golden brown and the apples are tender. If the topping starts to brown too quickly, loosely tent with foil.
  9. Let cool slightly before serving this delicious apple streusel.
