Ingredients:
- 2 large cucumbers, thinly sliced (about 500g / 1.1 lbs)
- 1 medium sweet onion (Vidalia or similar), thinly sliced (about 150g / 5.3 oz)
- 1/2 cup white vinegar (120ml / 4 fl oz)
- 1/4 cup granulated sugar (50g / 1.8 oz)
- 2 tablespoons water (30ml / 1 fl oz)
- 1 tablespoon vegetable oil (15ml / 0.5 fl oz)
- 1/2 teaspoon salt (3g / 0.1 oz)
- 1/4 teaspoon ground black pepper (1g / 0.04 oz)
- 1/4 teaspoon dried dill (1g / 0.04 oz) (optional)
Instructions:
- Thinly slice the cucumbers and onions. A mandoline makes this super easy, but a sharp knife works just as well!
- Place the sliced cucumbers and onions in the large mixing bowl.
- In a separate bowl, whisk together the white vinegar, sugar, water, vegetable oil, salt, pepper, and dried dill (if using) until the sugar is dissolved.
- Pour the dressing over the cucumber and onion mixture. Gently toss to combine, ensuring all the vegetables are coated.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but it makes the salad even more refreshing.
