Ingredients:

  • 1 pound (450g) halloumi cheese, cut into 1-inch (2.5cm) cubes
  • 4 cups (about 1 pound/450g) seedless watermelon, cut into 1-inch (2.5cm) cubes
  • 1 red onion, cut into 1-inch (2.5cm) pieces (optional)
  • Olive oil, for brushing
  • 1/4 cup (60ml) fresh lime juice
  • 1/4 cup (60ml) olive oil
  • 1/4 cup (approximately 1 bunch) fresh mint leaves, finely chopped
  • 1 tablespoon honey (or maple syrup for vegan option)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Thread halloumi, watermelon, and red onion (if using) onto skewers, alternating ingredients.
  2. Preheat grill to medium-high heat. Lightly brush the grill grates with olive oil.
  3. Grill the skewers for 2-3 minutes per side, or until the halloumi is golden brown and slightly softened. Watch carefully; halloumi can burn quickly.
  4. Whisk together lime juice, olive oil, mint, honey, red pepper flakes (if using), salt, and pepper in a small bowl.
  5. Arrange the grilled skewers on a platter. Drizzle generously with the mint-lime dressing. Serve immediately.
