Ingredients:

  • 1.5 lbs sirloin tip or filet mignon, cut into 1.25-inch cubes
  • 0.25 cup olive oil
  • 0.33 cup soy sauce
  • 2 tbsp balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tsp black pepper
  • 2 large bell peppers, cut into 1.5-inch squares
  • 1 large red onion, cut into thick wedges
  • 8 oz cremini mushrooms, whole, stems removed
  • 1 medium zucchini, sliced into thick rounds

Instructions:

  1. In a large glass mixing bowl, whisk together olive oil, soy sauce, balsamic vinegar, minced garlic, and black pepper. Submerge the beef cubes in the marinade, cover, and refrigerate for 1 to 4 hours.
  2. Thread the marinated beef and prepared vegetables onto metal skewers, alternating between meat, peppers, onions, and mushrooms. Leave a tiny 1mm gap between items to allow heat circulation.
  3. Preheat your grill to medium-high (425°F/220°C). Place the skewers directly over the heat and sear undisturbed for 3-4 minutes to develop a crust.
  4. Flip the skewers and continue grilling for another 3-5 minutes. Use an instant-read thermometer to check for desired steak doneness before removing from the grill.
