Ingredients:
- 1.5 lbs sirloin tip or filet mignon, cut into 1.25-inch cubes
- 0.25 cup olive oil
- 0.33 cup soy sauce
- 2 tbsp balsamic vinegar
- 3 cloves garlic, minced
- 1 tsp black pepper
- 2 large bell peppers, cut into 1.5-inch squares
- 1 large red onion, cut into thick wedges
- 8 oz cremini mushrooms, whole, stems removed
- 1 medium zucchini, sliced into thick rounds
Instructions:
- In a large glass mixing bowl, whisk together olive oil, soy sauce, balsamic vinegar, minced garlic, and black pepper. Submerge the beef cubes in the marinade, cover, and refrigerate for 1 to 4 hours.
- Thread the marinated beef and prepared vegetables onto metal skewers, alternating between meat, peppers, onions, and mushrooms. Leave a tiny 1mm gap between items to allow heat circulation.
- Preheat your grill to medium-high (425°F/220°C). Place the skewers directly over the heat and sear undisturbed for 3-4 minutes to develop a crust.
- Flip the skewers and continue grilling for another 3-5 minutes. Use an instant-read thermometer to check for desired steak doneness before removing from the grill.
