Ingredients:

  • 14.9 oz Guinness Draught, chilled
  • 150g premium vanilla bean ice cream (approx. 2 large scoops)
  • 1 oz Irish cream liqueur
  • 0.5 oz Irish whiskey
  • 1 tbsp chocolate syrup
  • 1 tsp unsweetened cocoa powder
  • 1 pinch flaky sea salt

Instructions:

  1. Put your glass in the freezer for 10 minutes before you start.
  2. Drizzle chocolate syrup down the inside walls of the chilled glass in a spiral pattern.
  3. Place two large scoops (150g) of firm vanilla bean ice cream into the bottom of the glass.
  4. Tilt the glass at a 45-degree angle and slowly pour the Guinness Draught against the side of the glass to minimize foam eruption.
  5. In a small glass, stir the 1 oz Irish cream and 0.5 oz Irish whiskey together. Pour this mixture slowly over the top of the foam.
  6. Wait for the surge to settle, then top with a light dusting of cocoa powder and a pinch of flaky sea salt.
