Ingredients:

  • 1 cup (120g) oat flour
  • 1/2 tsp (3g) baking soda
  • 1/2 tsp (1g) ground cinnamon
  • 2 medium (200g) overripe bananas, mashed
  • 1/4 cup (60ml) unsweetened applesauce
  • 1 large (50g) egg
  • 2 tbsp (30ml) melted coconut oil
  • 1 tsp (5ml) pure vanilla extract
  • 4 oz (115g) softened cream cheese
  • 1/4 cup (60g) thick Greek yogurt, strained
  • 2 tbsp (30ml) pure maple syrup
  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 4-inch pan and line the bottom with parchment paper.
  2. In a medium bowl, combine oat flour, baking soda, and cinnamon until no lumps remain.
  3. In a large bowl, mash bananas into a smooth paste. Stir in applesauce, egg, melted coconut oil, and vanilla until emulsified.
  4. Gently fold the dry ingredients into the wet. Stir just until combined.
  5. Transfer batter into the pan and smooth the top with a spatula.
  6. Bake for 22–25 minutes until a toothpick inserted into the center comes out clean.
  7. Allow cake to cool completely before frosting.
  8. Prepare frosting by mixing softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until smooth.
