Ingredients:
- 1 cup (120g) oat flour
- 1/2 tsp (3g) baking soda
- 1/2 tsp (1g) ground cinnamon
- 2 medium (200g) overripe bananas, mashed
- 1/4 cup (60ml) unsweetened applesauce
- 1 large (50g) egg
- 2 tbsp (30ml) melted coconut oil
- 1 tsp (5ml) pure vanilla extract
- 4 oz (115g) softened cream cheese
- 1/4 cup (60g) thick Greek yogurt, strained
- 2 tbsp (30ml) pure maple syrup
- 1/2 tsp (2.5ml) vanilla extract
Instructions:
- Preheat oven to 350°F (175°C). Grease a 4-inch pan and line the bottom with parchment paper.
- In a medium bowl, combine oat flour, baking soda, and cinnamon until no lumps remain.
- In a large bowl, mash bananas into a smooth paste. Stir in applesauce, egg, melted coconut oil, and vanilla until emulsified.
- Gently fold the dry ingredients into the wet. Stir just until combined.
- Transfer batter into the pan and smooth the top with a spatula.
- Bake for 22–25 minutes until a toothpick inserted into the center comes out clean.
- Allow cake to cool completely before frosting.
- Prepare frosting by mixing softened cream cheese, Greek yogurt, maple syrup, and vanilla extract until smooth.
