Ingredients:
- 2 medium apples (such as Honeycrisp, Gala, or Braeburn), peeled, cored, and diced (approximately 2 cups diced) (About 300g)
- 1 tablespoon lemon juice (15ml)
- 1 tablespoon granulated sugar (12g)
- 1 teaspoon ground cinnamon (3g)
- ⅛ teaspoon ground nutmeg (pinch) (About 0.5g)
- ¾ cup all-purpose flour (90g)
- 1 teaspoon baking powder (4g)
- ¼ teaspoon salt (1.5g)
- ½ cup unsweetened applesauce (120ml)
- ¼ cup milk (dairy or non-dairy) (60ml)
- 1 large egg (50g)
- 1 teaspoon vanilla extract (5ml)
- Powdered sugar, for dusting (optional)
- Sugar free maple syrup or honey (optional)
Instructions:
- In a bowl, toss diced apples with lemon juice, sugar, cinnamon, and nutmeg. Set aside.
- In a separate large bowl, whisk together flour, baking powder, and salt.
- Add applesauce, milk, egg, and vanilla extract to the dry ingredients. Whisk until just combined – don't overmix!
- Gently fold the spiced apples into the batter.
- Preheat air fryer to 350°F (175°C).
- Drop spoonfuls of batter into the preheated air fryer basket, leaving space between each fritter. Cook for 12-15 minutes, flipping halfway through, until golden brown and cooked through. Internal temperature of apple should reach 165F/74C.
- Let the fritters cool slightly on a wire rack before dusting with powdered sugar (if using) and serving.
