Ingredients:

  • 1 cup (150g) Medjool dates, pitted
  • 1/2 cup (125g) creamy almond butter (unsweetened)
  • 1 tsp (5ml) pure vanilla extract
  • 1 cup (90g) rolled oats
  • 1/2 cup (45g) unsweetened shredded coconut
  • 2 tbsp (15g) chia seeds
  • 1/4 tsp (1.5g) sea salt
  • 2 tbsp (20g) shredded coconut

Instructions:

  1. Place the pitted dates in the food processor and pulse until they form a thick, sticky paste.
  2. Add the almond butter and vanilla extract to the processor and process again until the mixture is velvety and cohesive.
  3. Add the rolled oats, chia seeds, sea salt, and shredded coconut. Pulse in short bursts until the mixture looks like a coarse, crumbly dough.
  4. Scoop approximately 1 tablespoon of dough and roll between palms into a sphere.
  5. Roll each ball in the extra shredded coconut.
  6. Place on a parchment-lined sheet and chill in the refrigerator for 30 minutes to firm up.
