Ingredients:
- 1 cup (90g) Old Fashioned Rolled Oats
- 2 tablespoons (24g) Chia Seeds
- 1 teaspoon Ground Cinnamon
- 0.125 teaspoon Sea Salt
- 1 large overripe banana, mashed
- 1.25 cups (300ml) Unsweetened Almond Milk
- 0.5 cup (120g) Plain Greek Yogurt
- 1 teaspoon Pure Vanilla Extract
- 1 tablespoon (15ml) Maple Syrup
- 2 tablespoons Chopped Walnuts
Instructions:
- In a medium mixing bowl, mash the overripe banana until it reaches a smooth, liquid-like consistency with very few lumps.
- Add the milk, Greek yogurt, vanilla extract, and maple syrup to the mashed banana. Whisk until well combined and creamy.
- Stir in the rolled oats, chia seeds, cinnamon, and salt. Ensure the oats are fully submerged and the chia seeds are evenly distributed.
- Divide the mixture evenly between two 16-oz glass mason jars, leaving space for toppings.
- Tighten the lids and refrigerate for at least 4 hours, or ideally overnight (8 hours) for optimal texture.
- Stir the oats before serving. Top with fresh banana slices and chopped walnuts.
