Ingredients:
- 4 pieces whole grain flatbread (170g each)
- 1 tbsp extra virgin olive oil
- 1 lb cooked and shredded chicken breast
- 1 cup part-skim shredded mozzarella cheese
- 1/2 cup thinly sliced red onion
- 1 cup fresh baby spinach
- 1/2 cup sliced mushrooms
- 1/2 cup low-sugar BBQ sauce
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Brush each flatbread lightly with olive oil and bake for 3 minutes to create a moisture barrier.
- Remove flatbreads from oven and spread BBQ sauce evenly across the surface, leaving a 1/2 inch border.
- Apply a light layer of mozzarella cheese, then distribute the shredded chicken, sliced red onions, mushrooms, and baby spinach.
- Top with the remaining mozzarella cheese to secure the toppings.
- Bake for 7–10 minutes until the cheese is bubbling and brown in spots and the edges are stiff and mahogany-colored.
