Ingredients:

  • 4 pieces whole grain flatbread (170g each)
  • 1 tbsp extra virgin olive oil
  • 1 lb cooked and shredded chicken breast
  • 1 cup part-skim shredded mozzarella cheese
  • 1/2 cup thinly sliced red onion
  • 1 cup fresh baby spinach
  • 1/2 cup sliced mushrooms
  • 1/2 cup low-sugar BBQ sauce

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Brush each flatbread lightly with olive oil and bake for 3 minutes to create a moisture barrier.
  3. Remove flatbreads from oven and spread BBQ sauce evenly across the surface, leaving a 1/2 inch border.
  4. Apply a light layer of mozzarella cheese, then distribute the shredded chicken, sliced red onions, mushrooms, and baby spinach.
  5. Top with the remaining mozzarella cheese to secure the toppings.
  6. Bake for 7–10 minutes until the cheese is bubbling and brown in spots and the edges are stiff and mahogany-colored.
