Ingredients:

  • 2 large Ripe Bananas, firm (approx. 300g)
  • 1/4 cup Natural Creamy Peanut Butter (65g)
  • 1 cup Dark Chocolate Chips (170g)
  • 1 tbsp Coconut Oil (15ml)
  • 1 tsp Flaky Sea Salt
  • 2 tbsp Crushed Roasted Peanuts (20g)

Instructions:

  1. Line a large baking sheet with parchment paper. Slice the bananas into uniform 1/4-inch thick rounds.
  2. Place half of the banana slices on the tray. Top each with 1/2 teaspoon of peanut butter, then place the remaining banana slices on top to create a sandwich.
  3. Flash freeze the tray for 30–45 minutes until the peanut butter is firm and the bananas are partially frozen.
  4. In a microwave-safe glass bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth and glossy.
  5. Using a toothpick or dipping fork, submerge each frozen banana sandwich into the melted chocolate, tapping off excess.
  6. Return the bites to the parchment paper and immediately sprinkle with sea salt or crushed peanuts while the chocolate is wet.
  7. Freeze for another 30 minutes until the chocolate shell is completely hard.
