Ingredients:
- 2 large Ripe Bananas, firm (approx. 300g)
- 1/4 cup Natural Creamy Peanut Butter (65g)
- 1 cup Dark Chocolate Chips (170g)
- 1 tbsp Coconut Oil (15ml)
- 1 tsp Flaky Sea Salt
- 2 tbsp Crushed Roasted Peanuts (20g)
Instructions:
- Line a large baking sheet with parchment paper. Slice the bananas into uniform 1/4-inch thick rounds.
- Place half of the banana slices on the tray. Top each with 1/2 teaspoon of peanut butter, then place the remaining banana slices on top to create a sandwich.
- Flash freeze the tray for 30–45 minutes until the peanut butter is firm and the bananas are partially frozen.
- In a microwave-safe glass bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until smooth and glossy.
- Using a toothpick or dipping fork, submerge each frozen banana sandwich into the melted chocolate, tapping off excess.
- Return the bites to the parchment paper and immediately sprinkle with sea salt or crushed peanuts while the chocolate is wet.
- Freeze for another 30 minutes until the chocolate shell is completely hard.
