Ingredients:

  • 1 lb (450 g) ground beef (or turkey for a leaner option)
  • 1 cup (90 g) rolled oats
  • 1 small onion, finely chopped (about ½ cup or 75 g)
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 cup (240 ml) milk
  • ¼ cup (60 ml) ketchup (plus more for topping)
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme
  • ½ teaspoon smoked paprika

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine oats and milk; let sit for a few minutes. Chop onion and mince garlic.
  3. Add ground beef, onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and paprika to the oat mixture. Mix until just combined.
  4. Transfer the mixture to the greased loaf pan. Shape it into a loaf in the pan, smoothing the top.
  5. Spread a thin layer of ketchup over the top of the meatloaf for added flavor and moisture.
  6. Place in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 165°F (74°C).
  7. Allow the meatloaf to rest for 10-15 minutes before slicing to ensure it holds together.
  8. Slice and enjoy with your choice of sides.
