Ingredients:
- 1 lb (450 g) ground beef (or turkey for a leaner option)
- 1 cup (90 g) rolled oats
- 1 small onion, finely chopped (about ½ cup or 75 g)
- 2 cloves garlic, minced
- 1 large egg
- 1 cup (240 ml) milk
- ¼ cup (60 ml) ketchup (plus more for topping)
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon dried thyme
- ½ teaspoon smoked paprika
Instructions:
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine oats and milk; let sit for a few minutes. Chop onion and mince garlic.
- Add ground beef, onion, garlic, egg, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, thyme, and paprika to the oat mixture. Mix until just combined.
- Transfer the mixture to the greased loaf pan. Shape it into a loaf in the pan, smoothing the top.
- Spread a thin layer of ketchup over the top of the meatloaf for added flavor and moisture.
- Place in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 165°F (74°C).
- Allow the meatloaf to rest for 10-15 minutes before slicing to ensure it holds together.
- Slice and enjoy with your choice of sides.
