Ingredients:

  • 4 cups water
  • 2 whole star anise pods
  • 1-2 tablespoons honey or maple syrup
  • 1-inch piece of fresh ginger, sliced
  • 1 cinnamon stick (optional)
  • Juice of 1 small lemon (optional)

Instructions:

  1. Pour 4 cups of water into a medium saucepan and bring it to a boil over high heat.
  2. Once boiling, add the star anise, sliced ginger, and cinnamon stick (if using).
  3. Reduce heat to low and let the mixture simmer for 10 minutes.
  4. After simmering, taste and add honey or maple syrup to your preference; stir well to dissolve.
  5. Remove from heat and strain the tea into cups using a fine mesh strainer or tea infuser.
  6. Squeeze in fresh lemon juice for an extra zing before serving.
