Ingredients:
- 1 cup (225g) cottage cheese
- 2 large (100g) eggs
- ½ tsp (3g) garlic powder
- ¼ tsp (1.5g) salt
- ¼ tsp (1g) dried oregano
Instructions:
- Combine the cottage cheese, eggs, garlic powder, salt, and oregano in a blender.
- Process on high for 30-60 seconds until the mixture is completely smooth and no curds remain. Note: This is the secret to the bread texture.
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper.
- Pour the batter onto the center of the parchment paper.
- Use a spatula to spread it into a circle or rectangle, roughly ¼ inch thick. Note: Keep it even to avoid burnt edges and a raw center.
- Bake for 20-25 minutes until the edges are mahogany colored and the center feels firm to the touch.
- Remove from the oven and let the flatbread cool on the pan for 5 minutes.
- Carefully peel it off the parchment paper.
- Let it rest for another 2 minutes before slicing or folding.
