Ingredients:

  • 1 cup (225g) cottage cheese
  • 2 large (100g) eggs
  • ½ tsp (3g) garlic powder
  • ¼ tsp (1.5g) salt
  • ¼ tsp (1g) dried oregano

Instructions:

  1. Combine the cottage cheese, eggs, garlic powder, salt, and oregano in a blender.
  2. Process on high for 30-60 seconds until the mixture is completely smooth and no curds remain. Note: This is the secret to the bread texture.
  3. Preheat your oven to 400°F (200°C).
  4. Line a baking sheet with parchment paper.
  5. Pour the batter onto the center of the parchment paper.
  6. Use a spatula to spread it into a circle or rectangle, roughly ¼ inch thick. Note: Keep it even to avoid burnt edges and a raw center.
  7. Bake for 20-25 minutes until the edges are mahogany colored and the center feels firm to the touch.
  8. Remove from the oven and let the flatbread cool on the pan for 5 minutes.
  9. Carefully peel it off the parchment paper.
  10. Let it rest for another 2 minutes before slicing or folding.
